Alright! We are back and it feels great! For our first weekend special, a taste of our trip to Mexico, more specifically Oaxaca where we had Chilaquiles a couple of times for breakfast. Sitting on the patio of some gorgeous café one morning, as I was getting my first taste of this Mexican cuisine staple I told Sarah : “We need to do this at Holybelly !”. Picture this: corn tortilla strips, lightly fried (they call them totopos) over which a red or green salsa is poured. Topped with two fried eggs, frijoles, crema, queso fresco, and the girls are adding marinated onions and spring onions. Let me just tell you, this is going to be something you don’t want to miss. As authentic and delicious as it gets.
