Tomorrow (Saturday 11th) the girls are gonna tackle yet another breakfast staple : Los huevos rancheros, hombre! What Wikipedia refers to as a “large mid-morning fare on rural Mexican farms” is known to me as a “stack of delicious food stuffed inside a corn tortilla that I loved shoving down my face during a filthy roadtrip in California many years ago”, but that’s for another post.

This is how it’s gonna go down, so to speak: Fresh tortillas from Mil Amores Tortilleria, they’re the real deal and we bought 5 kilos so we’re in the clear in terms of portions! Inside you’ll find: Yummy refried beans, homemade guacamole, fried eggs, sour cream, Brocciu and lime pickled onions. Chances are, they’re gonna be the bomba.

Now… I can see some of you going “Wait! I thought Holybelly was all about seasonal, local food! January is definitely not avocado season! Aaaaarrgh, betrayal!” Hold on there for a minute pal. Have a bite of that Huevos Rancheros for me please… yup, I know, it’s freaking good so… plus, not to be smart, but it is avocado season in la España so finish your plate and let’s pretend this never happened.
